Ouzo Cake


Ouzo Cake

 My cousin, Nickie, loves this cake so much he asks his wife, Marcie, to make it for him every birthday.





Recipe

Prep time:  10 minutes

Cooking time: 1 hour

Makes 12 pieces

Pre-heat oven to 3250

Ingredients

1 cup walnuts, chopped

1 15.25-ounce box of lemon cake mix with instant lemon pudding

4 eggs

¾ cup water

¼ cup Ouzo

½ cup cooking oil

10-inch tube pan

Directions

Ouzo cake

Grease and flour pan.  Sprinkle the walnuts evenly over the bottom of the pan.  Combine the cake mix, eggs, water, oil and Ouzo.  Beat for 3 minutes.  Pour the batter over the nuts in the tube pan.  Bake for 1 hour.  Place rack to cool for 30 minutes.  Invert onto a serving plate.  Prick with a skewer or meat fork all the way to bottom of the cake.  Pour the cake with honey syrup (see recipe below) into the holes.  Let stand at least ½ hour and serve. 

Honey Syrup

1 cup syrup

1 cup water

1 2-inch cinnamon stick

2 whole cloves

1 cup honey

2 tablespoons ouzo

 

Combine the sugar, water, cinnamon and cloves.  Bring the mixture to boiling and reduce the heat.  Simmer for 25 minutes without stirring until mixture is syrupy at 2300F on a candy thermometer.  Stir in the honey and strain.  Stir in Ouzo.
