Krasata

Scoring the krasata - step 1                                 Scoring the krasata - step 2 We made krasata today - a new dessert for me - loved it.  It's kind of a cross between baklava (without the phyllo) and melomakarona (with the orange-flavored simple syrup). Excellent with a cup of coffee.  This recipe includes whiskey and not wine even though the word krasata  translates into English word  "wines".  Next time I will try making krasata with a touch of Metaxa.  After conducting an internet search and researching Greek cookbooks, I found several different recipes for krasata that do include wine which I will make at another time. I wonder how they would taste if dipped in wine? We will see.  Krasata Prep Time: 30 – 45 minutes Bake Time: 45-55 minutes  Number of pieces:  48 Preheat oven to 350 0  F.  Ingredients for cookie 2 ¾ C. ...

Lamb Appetizers (Paidakia)

Marinating lamb chops to serve tomorrow with Greek potato salad.  This is fun appetizer or dinner to serve to  friends when they come to visit.  It's small enough to be an appetizer and big enough to serve for dinner like having tapas-Greek style.  Wish we had some horta (dandelions) to serve, but will serve spinach.  I won't forget the wine. I typically buy the Australian lamb loin chops (as above)  or the Frenched Lamb Rank from CostCo.  Lamb Chops Grecian Festival Style (Paidakia) Sear: 8-10 min Prep: 5 minutes Makes: 8 lamb chops   Lamb chops (paidakia) can be enjoyed grilled on your home barbeque or stovetop. Greek Potato Salad (Patata Salata)

Greek Potato salad - hold the mayo  Today, I made my Mom's Greek Potato Salad that I loved as a child and continue to make today.  I especially like the olive oil and lemon juice dressing with fresh dill and parsley. T he olive oil/lemon juice dressing enhances the natural flavor of the potatoes without adding mayonnaise (not my favorite) or eggs .  I make the potato salad with Russet potatoes, but you may use other potatoes such Yukon Gold or small red and white potatoes.   Since potatoes are very common in Greek dishes and potatoes are typically associated with Ireland, it made me wonder if the potato is indigenous to Greece.  As it turns out, potatoes didn't arrive in Greece until the 18th century via the Spanish Conquistadors.   Potato Salad ( Patatosaláta) Cook time: 20-30 min Prep: 10 min Serves: 4-6 Traditional Greek potato salad is made with olive oil, lemon juice and herbs – no mayonnaise. It is best served cold....
